Spos\u00f3b wykonania jest naprawd\u0119 prosty i \u0142atwy do odtworzenia w domowych warunkach.<\/p>\n\n\n\n<p>Przepis przedstawi\u0142a mi pasjonatka wyrob\u00f3w domowych i aktywna edukatorka w tym zakresie.   Zach\u0119cam do zapoznania si\u0119 i samodzielnego wykonania.<\/p>\n\n\n\n<p><strong>Sk\u0142adniki<\/strong> (na 4-5 serk\u00f3w)<strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Mleko krowie \u015bwie\u017ce &#8211; 7 l <\/li><li>serek camembert naturalny 1 szt (\u017ar\u00f3d\u0142o ple\u015bni i bakterii)<\/li><li>chlorek wapnia (opcjonalnie) 0,7-1 g<\/li><li>podpuszczka serowarska oko\u0142o 0,4 g<\/li><li>s\u00f3l morska lub kamienna niejodowana 1-2 \u0142y\u017cki<\/li><\/ul>\n\n\n\n<p>Je\u017celi mleko mamy gospodarskie nale\u017cy je podda\u0107 pasteryzacji. Mleko sklepowe \u015bwie\u017ce (mo\u017cna takiego u\u017cy\u0107)  jest pasteryzowane. Wa\u017cne jest to by by\u0142o pasteryzowane w niskiej temperaturze. Mleka UHT  nale\u017cy unika\u0107 w dzia\u0142aniach serowarskich.<\/p>\n\n\n\n<p>Pasteryzacja polega na podgrzaniu mleka do temperatury 65 st C i utrzymanie tej temperatury przez 20 minut. nast\u0119pnie mleko nale\u017cy ostudzi\u0107  &#8211; w tym przypadku do 35 st C<\/p>\n\n\n\n<p>Po ostudzeniu mleka czas na rozpocz\u0119cie procesu produkcji domowego camemberta. Zaczynamy od chlorku wapnia (je\u017celi u\u017cywamy- dodajemy 1 g na 10 l mleka), a nast\u0119pnie z zakupionego w sklepie serka naturalnego camembert (lub w\u0142asnego z poprzedniej produkcji) wycinamy 1\/6 cz\u0119\u015b\u0107 i siekaj\u0105c na mniejsze kawa\u0142ki wrzucamy przygotowanego pojemnika z niewielk\u0105 ilo\u015bci\u0105 przegotowanej i ostudzonej wody. Nast\u0119pnie pozosta\u0142\u0105 cz\u0119\u015b\u0107 camemberta oskrobujemy powierzchniowo z ple\u015bni i j\u0105 tak\u017ce dorzucamy do pojemnika z wod\u0105.<\/p>\n\n\n\n<p>\u017beby dobrze rozcie\u0144czy\u0107 po\u017cyczone z camemberta bakterie i ple\u015bnie najlepiej u\u017cy\u0107 blendera &#8211; wystarczy kilka sekund.  Uzyskan\u0105 zawiesin\u0119 wlewamy do mleka, mieszamy i pozostawiamy na godzin\u0119 . Po rozrobieniu w wodzie wlewamy j\u0105 do mleka mieszamy kr\u00f3tko i na koniec stabilizujemy mleko, by nie kr\u0105\u017cy\u0142o.  Czas wi\u0105zania (powstawania skrzepu) oko\u0142o 30 minut.<\/p>\n\n\n\n<p> Po utworzeniu si\u0119 skrzepu przyszed\u0142 czas na krojenie. W przypadku tego sera nie jest potrzebne uzyskanie drobnego ziarna. Kroimy wi\u0119c tylko w 2 razy w prostopad\u0142ych do siebie p\u0142aszczyznach oraz 2 razy po skosie. Nie ma tu potrzeby prasowania. Lekko ubijamy ser w foremkach d\u0142oni\u0105, a reszt\u0105 zajmie si\u0119 grawitacja.  Serki zostawiamy w foremkach w temperaturze pokojowej na okres 1 doby. Odk\u0142adamy je na serowarskim podk\u0142adzie na 2-3 godziny, a nast\u0119pnie otrzepujemy z soli  i umieszczamy je w zamkni\u0119tym pojemniku . Na dnie pojemnika powinien by\u0107 serowarski podk\u0142ad.
