W zakresie od 32 st C do 37 st C podnosimy temperatur\u0119 z pr\u0119dko\u015bci\u0105 1 stopie\u0144 na na 3 minuty co zajmie nam 15 minut.  W drugim etapie trwaj\u0105cym tyle samo czasu podnosimy temperatur\u0119 do 42 stopni. Ziarno wci\u0105\u017c si\u0119 zmniejsza i staje si\u0119 bardziej ci\u0119\u017ckie i zwarte, a serwatki przybywa.
